*Sake, a Japanese alcoholic beverage made from rice is generally classified as wine, due to alcohol level, but is not truly a wine. Premium sake is made from rice with the outside milled off to remove unwanted protien, oil, and microbes. Following are some sake terms to help you make a choice. HONJOZO - Brewers alcohol is added which makes it more aromatic with a milder flavor. JUNMAI - Made with rice, water, and yeast only, usually fuller flavored. GINJO - Special process, rice milled to 60%. DAIGINJO - Extra Special process, rice milled to 50%. CHOKARA - Extra Dry. NIGORI - Unfiltered (cloudy).
